When I scheduled this post, I thought it would be perfect for March – cozy, green, gluten & dairy-free broccoli soup. Then today came and I felt a little ridiculous posting it…it’s a windy and balmy 72 degrees here in Alabama.
As everyone knows, March weather can be highly unpredictable and if you can believe it, I just received an alert on my phone calling for a Winter Storm Warning…tomorrow.
Windows open today and snow day predicted tomorrow.
The good news, of course, is that this makes my recipe a little more relevant 😉
With our crazy eating habits, I like to take the challenge of finding a recipe I’d love to try that we can’t have and turn it into something we can. I no longer feel limited by our diet because of this. It is easier than you think to tinker with recipes and adjust until it is something both “legal” and tasty.
I have to say this soup didn’t take much practice. It was easy to make and soooo good. I just wanted something simple – nothing too heavy or cheesy. This gluten & dairy-free broccoli soup recipe did the trick.
Like most soups, this freezes really well. I like to store it in mason jars to heat up later for a quick and easy lunch.
